stuffed chicken.


husband and i made this wonderful meal last night and we absolutely loved every bite of it! it is simple, fast, delicious and looks amazing.

this delicious recipe is our own recreation from THIS recipe.

you will need:
+ 2 chicken breasts
+ 1 square glass pan [or any pan that you desire to put it in]
+ i can of cream of chicken soup
+ slices of ham
+ slices of cheddar cheese [or your choice of cheese]
+ rosemary to sprinkle on top

method:
+ preheat oven to 350 degrees
+ prepare pan by putting the 1 can of cream of chicken soup into it. then spread it around until it covers the whole bottom of the pan
+ slice ham and cheese into thinner slices to stuff into the chicken
+ make deep slices all down the chicken until you are satisfied you have enough
+ then stuff a piece of cheddar and ham into eat slice in the chicken
+ sprinkle rosemary on top of chicken for flavor and presentation
+ bake chicken at 350 degrees for 20-25 minutes

then eat the deliciously prepared chicken!

best chocolate chip cookies.

are you searching for the best chocolate chip cookie recipe? one that is soft, perfectly sweet and has the right amount of chocolate chips? well i have found it! i first found the delicious recipe on pinterest and it instantly had me intrigued. i absolutely love baking, especially on chilly days, and yesterday was perfect for baking.

ingredients:
2 1/4 cups of flour
1 tsp. of baking soda
1 1/2 tsp. of cornstarch
1/2 tsp. of salt
3/4 cups of butter, melted
3/4 cups of brown sugar
1/2 of white sugar
1 large egg & 1 egg yolk
2 tsp. of vanilla
1 cup of chocolate chips [i usually just add as much as i want, or that looks good] *i recommend using Guittard milk chocolate chips, because they are bigger and quite delicious.


method:
+ mix together flour, cornstarch, baking soda and salt in a large mixing bowl, then set it aside.
+ in a medium sized bowl, mix the melted butter, brown sugar and white sugar until there are no lumps. then mix in the egg & the egg yolk, and finally mix in the vanilla.
+ pour all of the wet ingredients into the dry ingredients and mix together with a spoon or spatula. the dough should be very soft and thick.
+ mix or fold in the chocolate chips. [they might not stick well because of the melted butter]

+ next, cover the cookie dough and chill it in the fridge for 2 hours. [i put it in the freezer for an hour and they turned out just fine. i was impatient to try the cookies] but make sure you chill them. 
+ after you finish chilling the dough, preheat the oven to 325 degrees
+ prepare cookie sheets by covering them with parchment paper, or spraying them with pam
+ roll the cookie dough into balls and place them into rows onto the pan. make the balls as small or big as you want, then bake for 11-12 minutes
+ [i cooked them for 9 minutes, opened the oven and turned the pan, then cooked them for 2 more minutes.]
+ the cookies will look a little undercooked when you take them out, but they will continue to cook while they cool.
+ finally your cookies are ready to eat after they cool for a minute or two!

*a secret to these chocolate chip cookies is after you roll them into balls and place them on the pan is place an extra chocolate chip or two on top of the balls of dough. it will give them the perfect chocolate chip look.

wrapped meatballs.

so a couple weeks ago my husband made this meal that was to die for. i am lucky that he is such a good cook, and yes, he even found it on pinterest because he is just that great. he originally found the recipe HERE

ingredients:
one 9 inch round cake pan
1 can of pillsbury dough layers biscuits; pulled into 2 layers
10 frozen fully cooked italian style meatballs; thawed and cut in half
2 sticks of string cheese; cut into 10 pieces
1 tbsp. of parmesan cheese
1/2 tsp. of italian seasoning
1/4 tsp. garlic powder
2 tbsp. of butter
1 cup marinara sauce

method:
+ heat oven to 375
+ separate biscuits into 2 layers
+ place meatball half and piece of cheese into biscuit layer; wrap dough around it and seal edges
+ place sealed edges down in the 9 inch cake pan
+ once the pan is filled, melt the butter and baste the top of the meatballs
+ sprinkle parmesan cheese and italian seasoning over melted butter
+ bake for 18-20 minutes or until it's golden brown
+ after it is finished, dip meatballs into warm marinara sauce

all in all it turned out delicious. there were a couple that were a little doughy, but then again our oven is very temperamental and doesn't cook like a normal oven does. happy cooking!

apple tart.


yes. i did in fact bake this beauty with my own two hands.
i first found this delicious little treat on pinterest HERE. then i investigated the original recipe HERE.

sometimes i get in a really 'pinterest wife' mood. i want to do a billion crafts and bake everything i tend to find on pinterest. i was doing my normal daily browsing and found this apple tart. i couldn't help myself and i just had to make it. they looked so delicious in the picture, and i just happened to have the same exact skillet that the recipe required. [thank you christmas gifts]

the only difference between them, was i used fresh apples instead of frozen ones. 

i thought i would share this treat since its deliciously easy, and a wonderful fall treat. happy baking! 

crust:
2 cups of flour, plus some for the work space
1/4 tsp. of salt
2 tbsp. of sugar
14 tbsp. of unsalted butter, chilled and cut into small pieces
3-4 tbsp. of cold water
[or you can just use a store bought pie crust if you wish]

method for crust:
+ heat oven to 400 degrees
+ combine flour, salt, & 1 tbsp of sugar
+ add butter and mix until smooth
+ add water, 1 tbsp at a time until dough is sticking together but still a bit crumbly [use 3-4 tbsp in total]
+ knead dough on lightly floured surface
+ make the dough into a disc shape
+ wrap in plastic wrap and refrigerate for 20 minutes

+ after it has refrigerated for 20 minutes, mold dough into skillet and allow the edges to hang over
+ then fill with apple filling


apple filling:
3-4 apples, chopped [i used 2 apples]
6 tbsp. of sugar
1 tbsp. of corn starch
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 stick of butter cut into cubes
2 tbsp. of butter melted for brushing the crust
8" or  9" cast iron skillet [or a 4" skillet will work fine]

method for apple filling:
+ in a bowl combine apples, sugar, cornstarch, and spices.
+ mix until apples are coated
+ fill pie crust with apple mixture, pile it high in the middle
+ gently fold dough edges toward the center
+ coat the crust with melted butter 
+ sprinkle sugar over apples and crust
+ then bake for 30-40 minutes, or until crust is brown and sugar has melted 
+ then serve and eat!

burnt dinner success.

monday night i made Nacho Pie trying to impress my husband and show him that i can cook things.  but apparently we have an exceptionally fast cooking oven here in Logan. it's suppose to take 20-25 minutes to cook Nacho Pie, instead it took about 12.

i was quite upset at my oven last night. colin insisted that it "looked great" and that "he bets it is delicious." my husband is far too kind when he lies.

but so what, my cooking isn't perfect and i'm learning as i go. you better believe we still ate it. of course we scraped the burnt part off, but colin was right, as he is most of the time. i will definitely be eating burnt Nacho Pie for lunch today.

NACHO PIE:

1lb. ground beef
1/2 chopped onion
1 can (8 oz) tomato sauce
2 tbs taco seasoning
1 tube (8 oz) refrigerated crescent rolls
1 1/2 cups crushed nacho tortilla chips
1 cup (8 oz) sour cream
1 cup (4 oz) shredded Mexican cheese blend or cheddar cheese

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.

Meanwhile, separate crescent dough into eight triangles; place in a greased 9 inch pie plate with points toward center. Press onto the bottom and up the sides to form a crust; seal perforations.

Sprinkle 1 cup of chips over crust. Top with meat mixture. Carefully spread sour cream over meat mixture. Sprinkle with cheese and remaining chips. Bake at 350 degrees for 20 to 25 minutes or until cheese is melted and crust is golden brown. Let stand for 5 minutes before cutting. Makes 6-8 servings.
